Shaynefully Delicious Chilled White Bean and Arugula Salad

RICHMOND, Va. - Great friend of the show Shayne Rogers, AKA Chef “Shon-YAY,” returned to the show with a light and tasty recipe that you can whip up at home tonight. Chef Shayne’s Chilled White Bean and Arugula Salad featuring succulent shrimp and fresh parsley, YUM.

¼ c Olive Oil
1 small red onion, chopped
2 cloves of garlic, minced
2 15 oz. cans of white beans, rinsed and drained
1 c canned artichokes
¼ c water
2 T sherry vinegar
¼ c fresh lemon juice
Salt and pepper
¼ c fresh parsley, chopped
1c grape tomatoes, halved
1c. cucumber, chopped
8c arugula

Add fully cooked chicken or shrimp if you like

Heat oil in a skillet over medium heat, stir in onion and garlic and cook until translucent.  Stir in beans and artichokes and cook until warmed through. Stir in water, lemon juice, vinegar, salt, pepper and parsley.  Simmer for about 4 minutes.  Chill for at least an hour or you could make a batch of this and keep it in the fridge for really hot days.  In a large serving bowl toss arugula, tomatoes and cucumbers, top with the chilled white bean mixture.  Add chicken or shrimp if you like.
