BIG HERM’S BLACKENED CATFISH
SAUTÉED RICE & KICKING BLACK BEANS
BLACKENED SEASON SAUTÉED RICE
1 cups Paprika 4 cups Cooked Rice
1/2 cup Salt 1 Onion (diced)
1/4 cup Garlic 1 Clove Garlic (minced)
1/4 cup Black Pepper 1 cup Corn
1/4 cup Sugar 1 Red Pepper
1/8 cup Cayenne 1 Green Pepper
BLACKENED CATFISH KICKING BLACK BEANS
4 Catfish Filets (4-7 ounces) 2 15.5oz can Black Beans
1/4 cup oil 1/2 tsp Garlic, Salt & Pepper
1/4 tsp Cayenne Pepper
In medium sauce pan place all ingredients for the Kicking Black Beans. Cook on medium heat.
In large sauté pan place 1 TBL of oil on medium-high. Sautee onions, garlic and peppers until translucent. Add corn and cooked rice. Reduce to low.
In large bowl place all ingredients for Blackened Season. Mix well. Place milk in large bowl
In another large sauté pan heat ¼ cup oil. Place Catfish in Blackened Seasoning pressing lightly to coat both sides well. Fry on Medium High heat 3-4 mins on each side.
Spoon Rice along one side of the plate then Beans along the other side. Place Catfish on top in the middle. Top with Pico de Gallo
