Recipe 2: Chimi Beef Burger

Ingredients

Burger

  • 3 Tbsp. Cilantro, minced
  • 1 Tbsp. L&P Worcestershire sauce
  • Salt & Black Pepper, to taste
  • 6 Wellsley Farms Sirloin Burgers, defrosted
  • 2 Tbsp. Wellsley Farms Vegetable Oil
  • 1 each Red and Yellow Sweet Peppers, sliced
  • 1 large Red Onion, sliced
  • 6 Kaiser Rolls
  • 3 cups Wellsley Farms Cole Slaw

Chimi Sauce

  • 1/2 cup Mayonnaise
  • 1/4 cup Ketchup
  • 2 tbsp. Sweet Relish
  • 1 tbsp. Mustard
  • Hot Sauce Original (to taste)

Directions

  • In a small bowl whisk together the cilantro, Worcestershire and seasonings.
  • Place burgers in a shallow baking dish. Pour marinade over burgers and turn to coat. Cover with plastic wrap and refrigerate 15 min. or overnight for big flavor.
  • Preheat grill on medium. Brush peppers and onion with oil. Arrange on grate, cover and cook until tender-crisp, about 5 min. Remove to platter and tent with foil.
  • Raise heat to medium-high. Remove burgers from fridge and discard marinade. Cook until 160° in center, flipping halfway through, about 4 min. per side.
  • While burgers cook, blend together mayonnaise, ketchup, mustard, relish and hot sauce in a small bowl; set aside.
  • To serve, place a burger on a Kaiser roll and load it with slaw mix, grilled peppers and onion, and a huge dollop of "chimi" sauce!

Recipe 3: Watermelon Star Cake

Ingredients

  • 1 Seedless Watermelon
  • Reddi-wip: Real Cream Whipped Topping
  • 8 oz. Organic Blueberries
  • 8 oz. Organic Strawberries, halved
  • Domino Confectioners’ Sugar (optional, for garnish)

Directions

  • Wash and dry watermelon and place it on its side on a cutting board. Using a sharp butcher’s knife, trim away both ends leaving a 3"-thick slice in the middle.
  • Turn the slice flat side down. With the butcher knife, cut 5 inverted triangles around the circumference of the circle, connecting them at their edges to form a star shape. (See photo of finished dish) Set aside on paper towels for 5 minutes to drain.
  • Arrange star on serving dish or cake stand. Spray whipped cream around the bottom edge, then arrange a line of blueberries over it.
  • Spray more whipped cream on top of the cake and arrange strawberries and remaining blueberries.
  • Dust with powdered sugar, if desired, and serve.
