This Spicy Mexican Chicken Soup will warm you up all winter long

RICHMOND, Va - Culinary expert Shayne Rogers took our taste buds south of the border with this delicious Spicy Mexican Chicken Soup. Shayne specializes in providing simple but tasty recipes you can try for dinner tonight. This zesty and flavor-packed dish will heat up even the coldest winter night.

RECIPE

1T olive oil

1 large white onion, chopped

1t salt

1T garlic, minced

1½ t dried oregano

1t chili powder

1t ground cumin

15 oz diced tomatoes with chilies

2c low-sodium chicken broth

2c cooked chicken, shredded

30 oz canned hominy, drained

¼ c cilantro, chopped

Tortilla strips

Heat the oil in a large pot over medium heat.  Add onions and salt, stirring often til the onions are soft and starting to brown, 5-10 minutes. Stir in garlic and spices, cook for about 1 minute. Add tomatoes, broth, chicken and hominy. Bring to a simmer for about 10 minutes. Garnish with cilantro and tortilla strips.
