RICHMOND, Va - Richmond local Husband and wife champion bodybuilders Marcella Torres and Derek Tresize shared their tasty White Bean Chili in support of the international Meatless Monday program, which encourages individuals to go meat-free at least once a week to support better health, hep animals, and protect the environment. Quick White Bean Chili
Serves 4
Ingredients:
½ cup vegetable broth
¼ onion, diced
2 cloves garlic, minced
½ cup green salsa
½ tsp chili powder
½ tsp ground cumin
½ tsp coriander
½ tsp oregano
1 15-ounce can white beans
salt and pepper to taste
Optional:
baked sweet potatoes
sliced avocado
garnishes such as cilantro or green onion
Pour a small amount of vegetable broth into pan over medium-high heat. Add garlic and onion and saute about 4 minutes, adding more broth if it evaporates before onion is translucent.
Add green salsa, stir, then add spices and beans, stirring again to comnbine.
Add broth until chili is desired thickness.
Reduce heat, cover, and simmer about 5 minutes.
Ladle into bowls or over baked sweet potatoes that have been split lengthwise and spread apart. Top with avocado and, optionally, with cilantro or chopped green onion.
