Thai Noodle Salad with Steak Satay & Peanut Sauce

Ingredients for Noodle Salad:
1 pound soba noodles
Water for boiling noodles
1/2 cucumber, sliced
2 green onions, chopped
1/4 head green cabbage, shredded
1 carrot, thinly sliced

Directions:
Bring water to a rolling boil, and cook noodles according to pacage instructions
Chill in an ice bath to keep from cooking, and refrigerate until fully chilled
Toss with remaining ingredients and peanust sauce

Ingredients for Peanut Sauce and Steak Satay:
2 cups roasted peanuts, shelled and skins removed
2 tbsp. sesame oil
*Skip first two if you want to use Peanut Butter instead*
1 1/2 tbsp. low sodium soy sauce
1 tbsp. sriracha
2 tbsp. granulated sugar
2 cloves garlic, minced
1 lime, juiced

Directions:
Combine ingredients in food processor, and puree until consistent and smooth throughout
For skewers, if you plan on grilling them, soak skewers for 1 hour, to avoid burning
Skewer steak in thin strips on wooden skewers, running steak through wood several times, to keep it tight
Marinate in peanut sauce for 1 hour and grill over medium heat for 2-3 minutes per side for medium
Serve over noodle salad
