RICHMOND, Va (WTVR) – Good friend and Culinary Expert Shayne Rogers shared her recipe for Spicy Beef Stir Fry.
1 pound lean beef
2T soy sauce
1T rice vinegar
3t vegetable oil
2 T minced ginger
½ t crushed red pepper
1 pound green beans, trimmed and cut in half
1 red bell pepper, ribs removed and cut into strips
1/3 cup dry roasted peanuts, chopped
Cooked rice for serving
Cut beef across the grain into ¼ in slices and season with a ¼ t salt. Mix soy sauce, vinegar and sugar together and set aside. Cook green beans in boiling water for about 4 minutes, drain on a clean kitchen towel. Heat 2 t oil in a large skillet heated to medium high, add the ginger, pepper flakes and beef. Stir until no longer pink. Add in the beans, peppers. Cook stirring constantly until the peppers soften slightly. Garnish with peanuts and serve over rice.
