RICHMOND, Va (WTVR) – Our good friend and culinary expert Shayne Rogers is back with us to share her recipe for a ‘Shaynefully Delicious’ Beer Braised Beef Stew dish.
Beer Braised Beef Stew Recipe
6 oz. tomato paste
1.5# Beef Chuck, cut into 1 inch pieces
1 ½ # potatoes, scrubbed and diced
4 medium carrots, peeled and sliced
1 large onion, cut into 1” pieces
2 c. reduced sodium beef stock
1 14oz Irish Stout
5 garlic cloves, sliced
Salt & Pepper
10 oz. frozen peas
Pre-heat oven to 350. In a Dutch oven over medium heat melt butter and add tomato paste to brown. Toss the beef with the flour and add to the pot. Add the potatoes, carrots, onion, stock, stout, garlic, salt and pepper. Bring the pot to a simmer, stirring occasionally. After simmering for 10 minutes, cover and transfer to the oven. Let the stew cook in the oven for 2.5-3 hours. Just before serving, stir in peas and adjust seasoning.
