Minty Herb & Lemon
Pork loin steaks:
1 whole pork loin
2 tbs olive oil
1 tbs sugar
1 1/2 tbs salt
1/4 minced fresh garlic
Juice and zest from 1 lemon
2 tbs dried mint
1/4 cup fresh
Rosemary minced
4 tbs
Unsalted butter
2 tsp cornstarch mixed with 1/4 cup of chicken stock
Preheat your oven to 400 degrees
Mix all your rub ingredients together excluding the
Olive oil and butter.
Rub your loin with the olive oil- then roll the loin in your rub-
Place in a roasting pan and cook for 1hr and 15 mins or until internal temp reaches 165 degrees.
When pork is done tent with foil for 10 mins.
Pour pan juices and stock & cornstarch mixture into a sauce pan..
Reduce by 1/2 take off heat and add
2 tbs butter mix.
Cut loin into one inch steaks place
Brown on both sides in a sauce pan in the remaining butter finish with your pan sauce..
