VIRGINIA THIS MORNING: Big Herms’s ‘Southwestern Chicken Wraps’


  1. Local Caterer Herman Baskerville from ‘Big Herm’s Catering’ brings a taste from ‘South of The Border’ to Virginia This Morning’ when puts together his tasty and easy to make Southwestern Chicken Wraps.‎

(4) 12 inch wraps
2 tbs olive oil
3 cups cooked and shredded chicken thigh meat
1/4 cup diced red onion
2 tbs diced pickled jalapeños
2 cups fresh shredded spinach
2 cups corn
1 can drained rinsed black beans
1/2 cup diced tomatoes
1 tsp cumin
1 tsp granulated garlic
Salt and pepper to taste
1 thinly sliced avacado
1 cup shredded Monterey Jack cheese
Sauté red onions, corn and spinach and jalapeños in 1tbs olive oil, add beans, tomatoes, chicken and spices. Warm your tortillas in the microwave for 25 seconds.. Place 1/4 of the avacado and jack cheese on each tortilla, place 1/4 of your cooled filling on each tortilla, spread on one edge leaving a 2 inch border, fold in sides rolling up with seam side down, brush both sides of each wrap and place in a medium high pan, toast on both sides and enjoy.
