This morning, we sampled one of Hungry Girl Lisa Lillien's easy to make and enjoy recipes - this one is a crock-pot favorite - ' Slow Cookin’ Mexican Chicken'. Shayne Rogers shows us how it’s done…

Slow-cookin Mexican Chicken
1 c. canned crushed tomatoes
½ cup of roasted red peppers, drained and chopped
¼ c. canned diced green chiles
1 T dry taco seasoning mix
½ T garlic powder
¼ crushed red pepper
1 ½ pounds raw boneless chicken breasts, halved
Place all of the ingredients except the chicken into the bowl of a crock pot, stir until thoroughly mixed. Add chicken and coat well. Cook on high for 3 to 4 hours until chicken is fully cooked.
Remove the chicken to a bowl and shred with two forks. Return the chicken to the pot and mix well with the sauce.
You can use this chicken to make tacos, quesadillas, wraps or salads.
