VIRGINIA THIS MORNING: Cheesy Cauliflower Mash


Cheesy Cauliflower Mash
It’s a tasty alternative to Mashed Potatoes.  Meteorologist Carrie Rose along with Cheryl Miller’s guidance, put together one of Cheryl’s creations, a Cheesy Cauliflower Mash.


1 Large Head of fresh Cauliflower

1 ½ cups finely shredded cheddar cheese

2 oz. cream cheese

½ stick of butter or margarine

Salt and pepper to taste

Several dashed of hot sauce (optional)


You want your cream cheese and butter softened to room temperate before you start.

Pull or chop cauliflower heads apart into small evenly sized pieced.  Steam in one cup of water in the microwave for 8 minutes or until fork tender.  You can also boil the cauliflower in a large pot on the stove top, cover with water and cook until done.  Taste and adjust seasonings.
