Snow on the Pumpkin Bread
3 cups sugar
1 cup vegetable oil
4 cups flour
1 cup water
2 cups solid pumpkin
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup walnuts or pecans, finely chopped
2 Tablespoons baking soda
2 cups confectioners sugar
4 Tablespoons frozen orange juice concentrate
Preheat oven to 350 degrees.
Mix sugar and oil together, then mix in the eggs. In a seperate bowl, sift dry ingredients together.
Add pumpkin to egg mixture and stir. Add water and vanilla and stir. Add dry ingredients, and nuts and stir.
Spray three loaf pans with a non-stick cooking spray and evenly divide batter into the three pans. Place pans into oven and bake for 30 -35 minutes until done. Cool completely and frost with icing.
To make icing, combine confectioner’s sugar and orange juice concentrate. Add more juice if necessary to make frosting consistency.
Spread icing on top of pumpkin bread and serve.
