ON YOUR MENU: Chicken Cobb Salad

Dressing  (prepare at least an hour before serving)
1/3  cup Mayonnaise
3 Tablespoons plain yogurt
3 Tablespoons red wine vinegar
1 clove garlic, finely chopped
½ cup bleu cheese crumbles
   
 
Salad
8  cups mixed salad greens
10 oz. sliced smoked chicken breast, chopped
4 hard cooked eggs, quartered
1 medium ripe avocado, pitted, peeled and sliced
2  medium tomatoes, chopped
1/4  cup bacon bits
½ C. bleu cheese crumbles

 
In small bowl, whisk together mayonnaise, yogurt, vinegar and garlic .Stir in ½ c. bleu cheese.  Cover and refrigerate for at least an hour.  

Just before serving, arrange greens on 4 salad plates.  Top with salad ingredients.  Drizzle dressing over salads.
Sprinkle with bleu cheese crumbles and fresh ground pepper, if desired.
