On Your Menu: Cold Vegetable Salad

1 can French-style green beans

1 can chickpeas

1 can yellow corn

1 can green peas

1 can sliced carrots

1 medium onion, cut in half and sliced

1 green pepper, chopped

2-oz.jar pimientos, drained

½ cup vinegar

3/4 cup sugar

½ cup vegetable oil

Drain beans, chickpeas, corn, green peas, carrots. Add sliced onions, chopped green pepper, pimientos.

In another bowl, mix vinegar, sugar and oil, pour over vegetable mixture and marinate for at least 8 hours or overnight.
