Black-Eyed Pea Chili

What You’ll Need:
- 1lb. pork sausage
- 1 large onion, chopped
- 3 ribs celery, chopped
- 1/2 medium bell pepper, chopped
- 4 (15oz.) cans black-eyed peas, (do not drain)
- 1(10oz. can) diced tomatoes with chilies
- 3 cups vegetable juice (like V-8)
- 2Tbs. chili powder
Brown sausage until no longer pink. Drain on paper towels.
Discard all but one tablespoon of pan drippings. Sautee onion, celery, and bell pepper in drippings cooking until tender.
Add black-eyed peas, diced tomatoes, vegetable juice and chili powder. Stir in sausage. Bring to a boil.
Reduce heat and simmer; covered for 30 minutes.
This is delicious served over corn chips and also freezes well.
