Savory southern style shrimp and grits

RICHMOND, Va. -- It’s time for the tasty part of our show! Chef and caterer Andre Smith, Sr. of Andre’s Catering Services joined Andrias and Bill in the Virginia This Morning kitchen to make his savory southern style shrimp and grits.

Ingredients

  • 1 cup old fashioned grits
  • 4 cups water
  • Salt to taste
  • 3 tablespoons butter
  • 2 tablespoons whole milk
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 cup of chopped andouille sausage
  • 1-pound large shrimp peeled and deveined
  • 2 teaspoons Cajun seasoning (Use your favorite or make your own)
  • 1 tablespoon grapeseed oil
  • 1 bell pepper finely chopped
  • ½ large yellow onion chopped
  • 1 celery stick chopped
  • 1/4 cup low sodium chicken or vegetable broth

Instructions

Bring the water to a boil; add the salt and slowly add the grits. Cook over medium-low heat for 5-7 minutes or until smooth and creamy. Remove from heat, and stir in the butter, milk, and cheddar cheese.

In a large skillet over medium heat, add grapeseed oil, onions, celery, bell pepper. Once the veggies have started to soften ad the sausage and cook for 2 minutes. Lastly, add your shrimp, cook until shrimp pink and firm, adding your Cajun seasoning and chicken or vegetable broth. Remove pan from the heat and plate your dish. You may need to add more milk or cream to your grits to keep them creamy. They will thicken up over time. Spoon the cheesy grits into a bowl and add the shrimp mixture. Serve immediately.
