RICHMOND, Va. – Culinary enthusiast and great friend of the show Shayne Rogers, AKA Shaynefully Delicious, stopped by the kitchen to walk us through creating her Lemon Ice Box Cookies.
1 c butter, room temperature
1 ¼ c confectioner’s sugar, more for dusting
1 T lemon zest
2 T lemon juice
1 egg yolk
2 c flour
¼ c cornstarch
½ t salt
Cream butter, sugar and lemon zest until light and fluffy, about 3 minutes with a mixer. Scrape sides of bowl and add lemon juice and egg yolk, mixing until just combined. Whisk together flour, cornstarch and salt, add to mixer bowl. Mix until well combined. Scrape the dough out of the bowl onto a large sheet of plastic wrap. Use the plastic wrap to help form a log of dough about 10”x2”. The dough will be sticky. Refrigerate for an hour or up to two weeks. When you are ready to bake, preheat the oven to 350 degrees. Slice the cookies into 1 cm rounds and place on a parchment lined cookie sheet and bake for 12-14 minutes. The cookies should just be a tiny bit browned on the edges. While the cookies are still hot from the oven, generously dust with confectioner’s sugar. Enjoy!
