Key Lime Cupcakes
Graham Cracker Crust:
Use any recipe you like for this, but here is mine:
1/4 cup sugar
1 1/2 cup crushed graham crackers
4 tablespoons of melted butter.
Preheat oven at 350 degrees.
Mix together and put 1 Tbsp into cupcake wrappers.
Place in oven for 8 minutes.
Remove and let these cool, while you make your cupcake batter.
Cake:
1 1/4 cups Flour
1 1/2 tsp baking powder
1/4 tsp salt
3/4 cup sugar
6 tablespoons butter
1/4 cup and 1 tsp lime juice (Key lime juice preferably)
1/4 cup milk
Filling:
Use any lemon curd recipe and substitute limes for lemons. Refrigerate until you are ready to use.
Topping:
Whipped cream :-).
Directions:
*Oven should already be preheated at 350 degrees.
*Cream butter and sugar together first.
*Add the egg and egg white, one at a time.
*Add 1 tsp of lime juice
*Add flour and milk and 1/4 cup of lime juice, interchangeably (3 parts flour, 2 parts milk/lime juice).
*Add 1 drop of yellow and 1 drop of green food coloring and hand mix. (if you'd like, they will taste amazing no matter what).
*Add to your cupcake tins, filling the cup 3/4 of the way (remember your crust is there so you will use less batter).
*Bake for 20 minutes and set aside to cool.
*Once cooled, cut a small circle into the center to remove a little bit of the cake, and add your lime curd filling.
*Frost with whipped cream.
