RICHMOND, Va – Chef Uwe Schluzas, the Executive Pastry Chef from Kingsmill Resort demonstrated how to make a fruit shortcake with just 3 ingredients. He also showed how you dress it up with different flavors.
Shortcake with fresh berries and vanilla whipped cream
This dish is made with easy to make cinnamon biscuits, berries of your choice and some whipped cream with vanilla.
Cinnamon biscuits
3 cups Self-rising flour
2 cups heavy cream
2oz sugar
½ tsp. cinnamon
Mix all dry ingredients, than add the heavy cream. Mix until all ingredients are combined, let rest for 5 minutes.
Scoop the dough into 3 oz. pieces and place on a baking paper lined sheet pan. Sprinkle cinnamon sugar on top of the dough and flatten the top.
Bake in a to 370 f. Pre-heated oven for 15 to 20 minutes.
Berries
Mix berries ( about two pounds) with 2oz. of sugar. If you like you can also add a little liqueur to the berries. Grand Marnier or TripleSec go well with berries!
Refrigerate Berries for one hour
Cream
Whip 16 oz of heavy cream with 1.5 oz. of sugar and a 1/2 tsp. of vanilla to a soft peak
Cut the cinnamon biscuit in half. Top the bottom half with the whipped cream and berries put the other half on top and dust with powdered sugar.
