RICHMOND, Va. - Friend of the show, local baker Jeaketa Manga made a return visit to help us celebrate National Caramel Day. She walked us through making her homemade mini Snickers cupcakes with caramel.
Snickers Cupcakes (use any chocolate cupcake recipe you want but this one is our favorite)
Ingredients (Makes 48 minis and about 16 standard cupcakes)
1 cup flour
1 cup sugar
1/2 cup cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Instant coffee (about a tsp)
1 tsp vanilla
1/2 cup milk
1/2 cup boiling water
Peanut butter or caramel frosting
Chopped Snickers pieces
-Preheat the oven to 325 degrees.
-Combine all dry ingredients and whisk them together in the mixing bowl.
-Add all wet ingredients, except the water, and use the paddle attachment on the mixer.
-Add the hot water carefully and then beat on High for one minute.
-Pour into cupcake tins and bake for about 15-20 minutes (15 for mini cupcakes and 20 for standard sized).
Use your favorite Peanut butter or Caramel frosting to top. Add some Snickers pieces for garnish and enjoy!
