RICHMOND, Va. – Great friend of the show, Shayne Rogers is back with another one of her "Shaynefully Delicious" creations! Coconut Macaroon Blossoms are the perfect sweet treat and easy to make.
6 c Shredded Coconut
2/3 c All Purpose flour
1 t salt
1 14 oz. can sweetened condensed milk
2 t vanilla extract
1 t almond extract
40-45 unwrapped chocolate kisses
Preheat the oven to 350 degrees. Mix together coconut, flour and salt. Add condensed milk and extracts and mix well. The batter will be very stiff. Scoop cookies with a 2 tablespoon scoop. Roll into balls and place on a parchment lined sheet pan. Don’t skip this step, this batter is very sticky. Bake for 13-15 minutes, turning the pans after seven minutes. When the cookies are just out of the oven, press a chocolate kiss into the macaroon. Reshape the cookie around the kiss if necessary. Enjoy!
