Chef K’s Savory Turkey and Asparagus Strudel
2 cups Roast Turkey or Chicken, chopped into ½ inch pieces
1/2 lb. Asparagus, chopped in 1¼ inch long pieces
1½ cups Alfredo Sauce (recipe below)
1 sheet of Puff Pastry dough, thawed
1 Egg, beaten
1 tablespoon Water
Alfredo sauce recipe:
½ cup Butter
1 to 2 cloves of Garlic, finely chopped
2 cups Half and Half
4 ounces Cream Cheese
1 teaspoon Garlic Salt
1 teaspoon Italian Seasoning
1 cup grated Parmesan Cheese
Pepper to taste
Heat a deep large skillet or saucepan to medium high, add butter to melt. Add garlic and sauté for a few seconds stirring constantly. Add Half and Half and cream cheese, continue to cook until melted, whisking constantly. Whisk in garlic salt, Italian seasoning and grated parmesan. Pepper to taste.
Assemble strudel:
Preheat oven to 375 oF
Place Puff Pastry on a non-stick baking sheet to thaw. Unfold into a rectangle after completely thawed. In a mixing bowl combine turkey or chicken, asparagus and alfredo sauce. Spread mixture along center of puff pastry. Cut slits 1 inch apart along the two sides of the rectangle of the puff pastry. Starting at one end, fold 1 inch strips over turkey and asparagus mixture so as to form a braided look. Beat egg and 1 tablespoon water together and brush over puff pastry. Bake for 20 to 25 minutes or until flaky and golden brown. Slice and serve immediately.
