Ragu ‘Rosanna and Paccheri’
Recipe Serves 4
Ingredients:
mixed meat
300 gr. beef
200 gr. Calf
150 g pork
100 g lamb
1 chopped onion
2 garlic cloves
1 stalk celery
1 carrot
2 bay leaves
1 sprig rosemary
Pureed tomato 900gr
4 tablespoons white wine
5 tablespoons extra virgin olive oil
salt
pepper
paccheri GR500
Parmesan GR50
Method:
1. In a saucepan, pour the oil, the chopped onion and whole garlic.
2. Start slow cooking, carrot, celery and rosemary and let it cook for a few minutes
3. Remove the rosemary and garlic
4. Add the cubed meat, the two bay leaves and continue cooking.
5. Add the white wine, let it evaporate and brown the meat on low heat for an hour.
6. Pour the tomato sauce, add salt and continue cooking for 3 hours.
7. Bring water to a boil, add salt, add the pasta, and cook for 7-8 minutes
8. Drizzle with the sauce, sprinkle with Parmesan cheese and serve hot.
