Deep Fried Sweet Potato Balls
1/2 tsp. salt 2 cups mashed sweet potatoes 6 marshmallows 1 cup of graham cracker crumbs 1 egg, beaten 2 tbsp. water Vegetable Oil for deep frying
Mix salt with sweet potatoes. Roll into 6 balls. Put one marshmallow into center of each ball. Roll each ball in crumbs. Combine egg and water. Dip balls into this mixture. Roll again in crumbs. Fry in heated vegetable oil, about 4 minutes, until golden brown and crispy. Drain. Sprinkle with powdered sugar (optional) Serves 3.
