“Shaynefully Delicious” Brown Sugar Blueberry Cobbler

RICHMOND, Va. – Another Virginia This Morning Fan Favorite, Shayne Rogers, AKA Chef “Shon-YAY,” created another one of her “Shaynefully Delicious” Desserts.  This time she featured her Iron Skillet Blueberry Cobbler, a decadent dessert that is easy to prepare and BIG on flavor.

Brown Sugar Blueberry Cobbler
¼ c butter
3c blueberries (or a mixture of fresh seasonal fruit)
Zest and juice of 1 small lemon
1 c sugar, divided
1 ½ c flour
2t baking powder
1 ½ c buttermilk

Preheat oven to 350 degrees. Melt butter in cast-iron pan on top of stove.  Toss berries with ¼ cup of sugar, lemon zest and lemon juice.  Stir together ¾ c cup of sugar with flour and baking soda until well combined.  Stir in buttermilk.  It doesn’t have to be perfectly mixed, the lumps will cook out.  Pour batter over the melted butter and berries over batter.  Do not stir. Seriously don’t stir it. You can artfully arrange the berries. Pop it into the oven for 45-60 minutes until it is golden brown
