Aspiring Chef Claire Hollingsworth Is Back in Action!

RICHMOND, Va - 10-year old “Chopped Junior” Champion, Claire Hollingsworth made a return visit to our Virginia This Morning kitchen.  Last time she was here, she put together her Ribeye steak creation that won her the title "Chopped Junior" Champion. Today, she created her signature “Chicken Cordon New,” the dish that gained her a spot on the show.

Chicken Cordon New:

chicken breast

spinach

sliced havarti cheese

prosciutto

kosher salt/pepper

oil

toothpicks

Instructions:  Preheat oven to 425.  Pound out chicken, salt and pepper.  Lay spinach leaves, cheese slice and then prosciutto.  Roll chicken, and use toothpicks to secure.  Sear chicken.  Finish off in oven.

Parmesan Cream sauce:

heavy cream

fresh grated parmesan cheese

kosher salt/pepper

Supernova Roasted Potatoes

2 tsp Supernova seasoning (Claire's seasoning which is combo of 8 different spices, no salt)

2 large sweet potatoes

2 large white potatoes

1 teaspoon sea salt

3-5 tablespoons safflower oil

Preheat oven to 425 degrees.  Cube potatoes into 1/2 to 3/4 inch pieces.  Line large cookie sheet with foil or parchment paper.  Toss potatoes  in bowl or on sheet with the oil, salt and seasoning.

Roast (bake) in oven 30-35 minutes until tender and roasted.
