Big Herm was back with his warm and tasty Sweet Potato Fritters

RICHMOND, Va - Herman “Big Herm” Baskerville, Owner of Big Herm’s Kitchen & Catering, was back in the Virginia This Morning kitchen to share the recipe for his crispy Sweet Potato Fritters. For more information you can visit online at www.bighermskitchenrva.com.

Sweet Potato Fritters

1 cup  flour
1tsp baking powder
1/2 tsp salt
1tsp cinnamon
1/2tsp ground ginger
1/4tsp ground allspice
1/2cup dark brown sugar
1 egg, lightly beaten

1cup milk
15 ounces sweet potato purée (approx 2 small or 1 large sweet potato peeled boiled and processed)

Instructions
Mix flour, baking powder, salt, spices and sugar in a bowl, In a separate bowl whisk together egg and milk and pour over dry ingredients.
Stir to combine completely.  Add sweet potato puree and blend well.

Add canola oil to a medium sized pot and fill to a depth of three inches heat to 350-360 degrees add batter to the oil by the tablespoonful and fry turning occasionally until the fritters are a deep golden brown, approximately 4-6 minutes.
Remove from pan and drain on paper towels.
Serve hot with vanilla ice cream.
