Chef K’s Caribbean Chicken Salad


1 lb cooked chicken breast

1 red sweet pepper, seeded and chopped

1 mango, peeled and cubed

3 green onions, chopped

1 cup chopped green cabbage

Sea Salt



Juice of 2 Limes

½ cup light sour cream

1 Tbsp red wine vinegar

2 Tbsp mango chutney

In a large bowl mix first 5 ingredients. Whisk together dressing, then pour over chicken mixture and toss until chicken mixture is well coated. Salt to taste and serve over Bibb lettuce.
