RICHMOND, Va - Culinary Expert Shayne Rogers walked us through the steps to make a sweet Peach-Thyme Tart. Complete with ripened peaches, peach preserves, and fresh thyme, this tasty treat is an easy-to-make ending to a summer meal.
Peach-Thyme Tart
1 pre-made pie crust (Pillsbury Roll-out Crust, not one formed in an aluminum pan)
3T raw sugar
1 ½T cornstarch
1 ½ lbs firm ripe peaches
¼ c peach preserves
1T honey
1t fresh thyme leaves
Preheat oven to 400 degrees. Pit and slice peaches, without peeling them. Roll out pie crust to a 10-11” circle. Mix sugar and cornstarch, sprinkle evenly over crust leaving a 2” border. Arrange peach slices over sugar and cornstarch leaving the same border on the crust. Fold crust partially over the fruit, it will not cover all of it. Combine peach preserves and honey in a microwave-safe dish and microwave for 45 seconds on high. Brush this mixture over fruit and crust edges and sprinkle with the remaining tablespoon of sugar. Bake at 400 degrees until crust browns. Remove from oven and sprinkle with fresh thyme leaves. Cool for about 10 minutes and enjoy.
