RICHMOND, Va - Chef Ida Mamusu shared a traditional Liberian sweet treat, Ginger Rice Bread. You can find this tasty dish and many others at Panafest RVA.  Proceeds from the event are used to support cultural day programs for U.S. school children and provide free accommodation for students on international missions and study abroad programs. The Festival is Friday, August 21st from 7pm to 10pm and Saturday, August 22nd from 12pm to 10pm at Innsbrook Pavilion. For more information visit www.panafestrva.org.

Chef Mamusu's Ginger Rice Bread

“ALL NATURAL, ALL GOOD”

INGREDIENTS:

4 WHOLE RIPE BANANAS

2 CUPS CREAM OF RICE

1 CUP OF WATER

½ TEASPOON SEA SALT

2 CUPS OF WHOLE, UNPEELED FRESH GINGER

½ CUPS OF NATURAL BROWN SUGAR

2 TEASPOONS BAKING SODA

PREPARATIONS: PRE-HEAT OVEN TO 300

  1. In a food processor, puree’ your whole bananas
  2. Remove and Pour bananas into a mixing bowl
  3. Use food processor to blend unpeeled ginger until it shows a creamed appearance
  4. Add all ingredients to the banana mixture
  5. Stir all ingredients well, into a creamy consistency
  6. Pour mixture into a 9X13 (half aluminum pan size) pan
  7. Oven should be set on 300
  8. Bake for about 30 minutes, until golden brown

THIS BREAD CAN BE EATEN ANY TIME.  IT IS A IDEAL BREAKFAST FOOD, AS WELL AS A NOON-DAY SNACK.
