RICHMOND, Va - Virginia This Morning resident Foodie Shayne Rogers served up another ‘Shaynefully Delicious’ creation with her Blueberry Goat Cheese Dessert Bruschetta. This sweet treat even got the seal of approval from our own beloved Receptionist Ms. Shirley. The dish is complete with toasted pound cake, fresh berries, and goat cheese.


Blueberry Goat Cheese Dessert Bruschetta

1 pre-made pound cake

3c blueberries

2T sugar

8oz fresh plain goat cheese

4oz light cream cheese

2T honey

Mint for garnish

Crush 1 cup of blueberries in a medium bowl and stir in the other 2 cups and the sugar.  Set this aside and slice pound cake into pieces about an inch wide and toast just until edges start to get a bit brown.  You can do this in the toaster oven or in a pan on the stove.  With a mixer, combine cheeses and honey until well blended.  Plate the pound cake on a pretty plate and spoon the goat cheese mixture generously over the top.  Finish with the blueberries and top with a sprig of the mint.  Enjoy!
