Lemon Chicken Recipe:
-1 lb boneless, skinless chicken breast cut into bite sized pieces
-Salt & pepper
-All purpose flour for dredging
-2 T olive oil
-1/3 c. fresh lemon juice
-2/3 c. chicken stock
-1/4 c. capers
-1 c. artichoke hearts in water, cut in quarters
Heat olive oil in pan. Salt and pepper chicken pieces.
Mix together lemon juice and chicken stock - taste and adjust stock or lemon if necessary.
Lightly coat chicken in flour.
Brown chicken in olive oil.
Add lemon juice, chicken stock, capers and artichokes to pan.
Bring to a simmer and let chicken cook through, about 10 minutes.
