RICHMOND, Va - Local Chef and good friend of Virginia This Morning Shayne Rogers, of Shaynefully Delicious, kicked off our Tuesday with an Asian inspired Cashew Shrimp dish. This light and flavorful meal can be paired with rice or Asian noodles, or is perfectly delicious all on its own! Try this quick and easy recipe for dinner tonight.

 2T Vegetable oil
¼ c sliced green onions
2t grated ginger
3 garlic cloves, sliced
¼ c low sodium soy sauce
2T rice vinegar
2T sherry
2 c broccoli florets
1 lb shrimp, peeled and deveined
1 t honey
Pinch crushed red pepper

½ c cashews, chopped

Heat oil in pan over med-high heat.  Toss in green onions, ginger and garlic, stir until fragrant.  Add soy sauce, vinegar and sherry to hot pan.  Add broccoli and stir to coat in sauce, let it steam for a bit until it is bright green.  Stir in shrimp, it will cook very quickly.  When it starts to curl and turn pink, stir in the honey and crushed red pepper.  Garnish with cashews.  Serve with rice or Asian noodles.
