Try this easy to make chicken saute with peppers and goat cheese for a flavor-packed meal

RICHMOND, Va - Good friend of Virginia This Morning, Shayne Rogers of ‘Shaynefully Delicious’ cooked up a flavor-packed chicken sauté with peppers and goat cheese. This dish is hearty, creamy, and easy to make, complete with bell peppers, onions, chicken, and soft crumbled goat cheese. By using fresh, pre-prepared ingredients, this dish is perfect to put together in no time.

RECIPE

2 T olive oil
2 med orange or yellow peppers, cut into strips
1 med onion, sliced
2 cloves garlic, minced
8 oz crushed tomatoes
1 T dried basil
3 T balsamic vinegar
Salt & Pepper
1# cooked chicken, cut into large chunks

4 oz soft goat cheese, crumbled.

Heat olive oil in large nonstick skillet over medium-high heat. Add peppers and onions, stirring constantly for 5-6 minutes until vegetables have softened and browned. Reduce heat to medium, add garlic, tomatoes, basil, vinegar, salt and pepper to taste. Bring to a simmer and add chicken. Simmer for about ten minutes until the flavors combine. Sprinkle goat cheese over the dish and serve over pasta or rice.
