A fresh and flavorful vegetarian alternative for your next summer cookout

RICHMOND, Va - Shayne Rogers of ‘Shaynefully Delicious’ delivered a delicious and vegetarian friendly Portobello Burger, complete with a homemade spicy mayo.

Portobello burgers with grilled onions and spicy mayo
3T low sodium soy sauce
1T olive oil
1t garlic, minced
2t ginger, grated
1 large sweet onion, sliced
4 large Portobello mushroom caps, trimmed and gills scraped
1 large beefsteak tomato, sliced
4 hamburger rolls
½ c mayo
1T Sriracha chile sauce
4T fresh mint, chopped
Preheat grill to medium-high . Mix together soy sauce, oil, garlic and 1t ginger in a medium bowl.  Dip onions and mushrooms in sauce and place on the grill, get the onions started first. They will take about six minutes per side. Meanwhile, mix together mayo, remaining 1t ginger, chile sauce and 2T mint in a small bowl.  Dress buns with mayo mixture and top with Portobello, tomato, onions and a sprinkle of mint.  Serve and enjoy.
