Shayne Rogers keeps it fresh with two tasty dishes

RICHMOND, Va - Our Monday show just wouldn't be complete without some great tasting food. Culinary Expert Shayne Rogers, with Shaynefully Delicious, is making the magic happen in the Virginia This Morning Kitchen and walks us through the steps on how to put together Linguine with White Beans, Tomatoes & Basil and a delicious Yogurt Parfait with Fresh Summer Fruit, Honey & Almonds.

Linguine with White Beans, Tomatoes & Basil

 8 oz. linguine

1 T olive oil

2 cloves garlic, minced

2 c grape tomatoes

½ t salt

½ t crushed red pepper flakes

1 15 oz. can cannellini beans, drained and rinsed

¼ c grate pecorino cheese

½ c. fresh basil leaves, torn

 Cook linguine according to the package directions, reserve ½ cup of the cooking liquid.  Heat oil in a large skillet, add garlic and cook, stirring constantly until it starts to get fragrant.  Add tomatoes, salt and pepper flakes.  Cook until tomatoes burst and start to form a sauce, about 4 minutes.  Stir in pasta, beans, cheese and about half of the reserved cooking liquid.  Toss until well mixed and heated through.  Remove pan from the heat and stir in the basil leaves.

Yogurt Parfaits with Fresh Summer Fruit, Honey and Almonds

2 c. cold Greek Yogurt

1 c raspberries

1c. black berries

1c peaches, chopped

2T honey

1/2c sliced almonds

 In a pretty glass layer yogurt, berries, peaches and honey twice.  Garnish with almonds.
