Peruvian- Style Steak

Recipe for Lomo Saltado

1/2 pound top sirloin sliced 1/8 to 1/4thick

1 medium tomato sliced into thick strips

1 medium red onion sliced into thick strips

salt and pepper to taste

a pinch of Peruvian salt

a pinch of cumin

a pinch of oregano

a pinch of rosemary

1/2 yellow chili pepper , Aji Amarillo in a can

2 pinches of chopped fresh cilantro

minced garlic to taste

1 dash soy sauce

1 tsp distilled white vinegar

1 tsp balsamic vinegar

1 tsp red wine vinegar

3 tbsp moscato (wine)

1/8 cup frying oil
Steamed white rice for serving

French fries for serving

In a plate, add/mix the top sirloin strips with the aji pepper, salt, pepper, cumin, oregano, minced garlic, Peruvian salt, and rosemary.  Add 1/8 cup of vegetable oil to a medium skillet over high heat. Once the oil is hot add the marinated top sirloin strips. Stir fry! After the meat has browned add the onions and tomato and cook until they soften. Add the soy sauce and freshly chopped cilantro. Pour in the wine, white vinegar, balsamic vinegar, and red wine vinegar and simmer until the vegetables are cooked through. Remove the beef mixture to a serving plate and top with the fries. Garnish with parsley or cilantro and serve with white rice on the side.
