RICHMOND, Va (WTVR) - Busch Gardens Williamsburg is known for their amazing park and rides. But did you know they also have some great tasting food? Every Friday through Sunday between May 31st continuing until June 23rd they are inviting you to sample foods from across the world with their Food and Wine Festival. Busch Gardens Williamsburg's Resident Chef Justin Watson is here with his tasty chilled pea soup.
Yield: 4 portions
Ingredients
2 Tbls Butter
½ each Yellow Onion
2 cloves Garlic
1 lb bag Frozen Peas
2 cups Vegetable Broth (water with vegetable bouillon)
2 tsp Sugar
1 cup Heavy Cream
Handful Fresh Spinach Leaves
To taste Kosher Salt and Fresh Ground Black Pepper
Procedure
In a thick bottom sauce pot over medium high heat add the butter and the onions and garlic then cook them down until the onions begin to turn translucent. Add the peas, vegetable broth and sugar and bring to a simmer for 5 minutes then turn off the heat. Using a bar or stick blender puree the soup adding the cream and spinach half way through the blending process. Allow the soup to cool first then season it with the salt and pepper since seasoning will change depending on the temperature it hits your palate.
