Tri Club Pumpkin Cake

Watch On Your Menu with Shirley Simmons Mondays on CBS 6 News at Noon. 

What You’ll Need:

  • 2    cups sugar
  • 4    eggs
  • 1    cup oil
  • 2    cups flour
  • 2    cups pumpkin puree, (not pumpkin pie filling)
  • 2    teaspoons cinnamon
  • 2    teaspoons baking soda
  • 1/2 teaspoon salt

ICING

  • 4oz. cream cheese, softened
  • 1/2 stick butter or margarine, softened
  • 1    teaspoon vanilla
  • 2    cups confectioners sugar

Directions:

Preheat oven to 350 degrees.  Mix sugar and eggs, add oil and mix WELL at medium speed, mix for 3 minutes.

Add flour, cinnamon, soda and salt.  Then add pumpkin and mix at a slower speed until well blended.

Pour into a well greased 9 x 13 x2- inch pan.  Bake for 30 minutes.  If using a Bundt pan bake 50 to 60 minutes.  Let cool.

ICING
Blend cream cheese and butter with mixer.  Add sugar and vanilla and blend until smooth.  Spread on cooledcake.
