VTM Recipes: Spiced Sweet Potato Cake Batter Cookies

RICHMOND, Va. – Cakes and cookies are part of the holidays and our first guest wanted to pass along a yummy seasonal recipe you can try out at home.  Richmond cake designer Michael Hall is here with his spiced sweet potato vegan gluten-free cookies.

Gluten Free Vegan Spiced Sweet Potato Cake Batter Cookies
1 can of Chickpeas                                                                                                                                                                                                                                                                 1/2 cup Gluten Free flour
1 cup Brown sugar
6 tbsp Oil
1 tbsp Vanilla extract
1/2 tsp Salt
1/2 tsp Baking soda
1/2 tsp Baking powder
1 1/2 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Allspice
1/2 tsp Cloves
1 tsp Apple cider vinegar
1/2 cup Mashed Sweet Potato

Mix all ingredients in a blender or food processor until well combined. Drop dough on a cookie sheet in tablespoon size heaps. Cookies will not spread much, so you may have to flatten them out a little. Bake cookies at 350 degrees for about 20 – 23 minutes. Let cookies cool completely before serving.
