RICHMOND, Va. – November 2nd is National Healthy Eating Day. Meredith Martin from the American Heart Association along with Richmond Executive Chef Glenn Hooper joined us in the Virginia This Morning kitchen and walked us through the steps on creating a tasty low fat Pork Stir Fry dish straight from the pages of the American Heart Association’s latest project, “Go Fresh Cookbook.” The ‘Go Fresh Cookbook’ is available now. Pork, Apple, and Pear Stir-Fry
serves 4 | 1 1/2 cups per serving

1/2 cup water, and 1/2 cup water divided use
1/4 cup plain rice vinegar
2 tbsp low sodium tamari sauce
1 tbsp brown sugar
1 tbsp cornstarch
1 tbsp toasted sesame oil
1 tsp canola oil
12 oz pork tenderloin
1 medium red bell pepper
1 medium onion diced in 1 inch squares
2 tsp minced ginger
1 medium apples
1 medium pear

1. In a medium bowl, whisk together 1/2 cup water, the vinegar, tamari sauce, brown sugar, corn starch, and sesame oil. Set aside.
2. In a large skillet heat the canola oil over high heat, swirling to coat the bottom (The oil should be sizzling.) Cook the pork for 3 minutes, stirring constantly. Transfer pork to plate, set aside.
3. Stir in the bell pepper, onion and gingerroot. Cook for 2 minutes, or until slightly softened, stirring constantly.
4. Quickly stir in apples, pears and remaining 1/2 cup of water. Cook for 2 minutes, or until apple and pear are tender-crisp, stirring frequently and scraping to dislodge brown bits.
5. Sir the vinegar mixture. Pour into skillet. Add the pork. Cook for 2 to 3 minutes, or until the sauce begins to bubble and thicken. Remove from heat, serve immediately.
