RICHMOND, Va. - Resident Foodie Shayne Rogers, AKA Chef Shon-YAY, was back in the kitchen to demonstrate how to create the perfect golden brown fritter. These ’Shayne-fully Delicious’ Poblano Corn Fritters with Lime Crema sauce are easy to assemble and a great recipe to add to your cookbook!
Poblano Corn Fritters with Lime Crema
3c fresh corn kernels, or frozen if not in season
¼ c diced poblano peppers
1c flour
1T sugar
1t baking powder
¼ t salt
¼ t pepper
2 eggs, beaten
¾ c heavy cream
1c Mexican Crema
Juice of 1 lime
Green onions, chopped for garnish
Oil for frying
Pre-heat griddle to medium or 350 degrees. Combine first seven ingredients in a large bowl. Combine the eggs and heavy cream in a small bowl. Stir the cream mixture into the corn mixture until just mixed. Scoop the batter onto griddle and cook for 2-3 minutes and flip only once and cook for another 2-3 minutes.
Mix together Crema and lime juice. Stack the fritters on a small plate and top with the Crema mixture and garnish with the chopped green onions.
