RICHMOND, Va. - Registered Dietician Lisa Raum, MS, RD from the Southeast Dairy Association made a return visit to our LIVE show to share some healthy and easy to make summer cookout recipes, including a Watermelon Feta Salad and Potato Casserole. Watermelon Feta Salad

1 medium red onion, thinly sliced
4 cups cubed seeded watermelon
2 cups cubed, peeled Jicama
8 oz Feta cheese
16 chopped fresh basil leaves
Vinaigrette
1 small jalepeno minced
1/4 cup Olive Oil
1 lime juiced
2 tbsp smoked paprika

1 tsp shredded cheddar cheese

Directions

In a large mixing bowl combine onion, watermelon, jicama and feta and set aside. In small mixing bowl whisk together the vinaigrette ingredients until well combined. If serving immediately, pour vinaigrette over watermelon salad, add fresh basil and gently toss to evenly coat. Recipe Note: Watermelon, vegetables and feta can be cubed and combined 6 hours ahead, covered and chilled. Add vinaigrette and fresh basil just before serving.

Myers Texas Taters

1/2 cup chopped onion
1/2 cup melted butter
16 oz light sour cream
1 tsp salt
1 can condensed cream chicken soup
1 lb frozen hash browns

10 oz sharp cheddar cheese

Directions

mix onion, butter, sour cream, salt and soup in a large mixing bowl. Add previous mixture to hash browns and cheese. Mix well until all ingredients are well incorporated. Bake for one hour or until Bubbling.

Frozen Key-Lime & Strawberry Pie

2 (6 oz) containers vanilla low-fat or fat-free yogurt
1 (6 oz) can frozen limeade thawed
1 (3.4 oz) box instant vanilla pudding mix
1 (10 oz) box frozen strawberries

 1 (9 inch) graham cracker crust

Directions

Mix yogurt and limeade, stir well. Add pudding mix; stir well. Stir in strawberries and pour into crust. Cover and freeze for at least 8 hours.
