RICHMOND, Va. - Fan Favorite Shayne Rogers who we affectionately call, “Chef Shon-YAY” shared another one of her “Shanynefully Delicious” creations.. a Peach Trifle that’s easy to assemble and you don’t have to turn the oven on.
Fresh Peach Trifle
3-4 fresh peaches
2T fresh lemon juice
2T sugar, if peaches are not super ripe
2t lemon zest
2c vanilla low-fat greek yogurt
Half of a pre-made angel food cake
Fresh berries

This recipe can be made as one large trifle or four individual trifles for a more elegant presentation. Inspect your peaches and checking for any blemishes. Chop the peaches into large chunks and toss into a medium bowl with sugar and lemon juice. Stir together yogurt and lemon zest. Chop or tear the cake into bite-sized pieces. Whether you are layering into a large trifle bowl or individual bowls, start with the chunks of cake, followed by the yogurt mixture and then the peaches and a few berries. Repeat these layers one more time. Chill the trifle for at least an hour, but not more than 4-5 hours. This is not a dessert I would assemble more than a few hours ahead of time. Enjoy!
