RICHMOND, Va - Virginia This Morning’s Resident Foodie, Shayne Rogers was back in the kitchen with another one of her “Shaynefully Delicious” creations, a hearty Chicken Gnocchi Soup.
1 T olive oil
½ onion, diced
1 stalk celery, diced
1 small carrot, diced
1 garlic clove, chopped
4 chicken breasts, cooked and diced
4 c low-sodium chicken stock
2 c half and half
Salt & pepper to taste
1 t dried thyme
16 oz potato gnocchi
1 c fresh spinach
Saute the onion, celery, garlic, and carrot in the olive oil over medium heat until the onion becomes opaque. Stir in chicken, chicken stock, half and half, salt, pepper and thyme. Add gnocchi and bring soup to a boil for four minutes, reduce heat and simmer for 10 minutes. Stir in spinach and simmer for another 2 minutes. It’s ready to serve, enjoy!
