Big Herm was back to dish out his signature Seafood Scampi

RICHMOND, Va - Herman “Big Herm” Baskerville, Owner of Big Herm’s Kitchen & Catering was back by popular demand and created his signature Seafood Scampi featuring succulent shrimp, lobster and scallops.  For more information visit online at www.bighermskitchenrva.com.

Seafood Scampi

> 1/2 pound lobster meat, 1-inch pieces
> 1/2 pound 16/20 shrimp
> 1/4 pound bay scallops
> 1/2 red pepper finely diced
> 1/2 red onion finely diced
> 1 tbs garlic chopped
> 3 tbs butter
> 1/4 cup white wine
> 1/4 cup chicken stock
> 1/2 teaspoon salt
> 1/2 pepper
> 1/4 tsp red pepper flakes
> 2 tbs lemon juice
> 2 tsp cornstarch
> 1 pound of pasta shells cooked and drained
> 2 tbs Parmesan cheese
> 2 tbs fresh chopped parsley

In a large pan sauté shrimp, scallops and lobster  in 1 tbs butter until half cooked remove from pan and set aside.

In the same pan sauté vegetables and garlic in the remaining 2 tbs of butter, Add lemon juice ,white wine and reduce.

Add chicken stock, salt and pepper, and cornstarch and simmer. Return seafood to pan cook a 2 mins and toss with pasta shells until sauce thickens a little. Plate and top with Parmesan and fresh parsley.
