Chef K is back with a seasonal Harvest Casserole and Spiced Apple Cider

RICHMOND, Va - Recipe Developer and Cookbook Author Chef K was back in the Virginia This Morning kitchen serving up a seasonal Harvest Casserole. Chef K’s Harvest Casserole

(from the Thanksgiving Menu in Chef K’s first cookbook “Phat Taste! Little Fat!”)

Preheat Oven to 400oF

2 Sweet Potatoes, Peeled and Thinly Sliced

2 Fuji Apples, Peeled, Cored and Thinly Sliced

1 Vidalia Onion, Thinly Sliced

1 pound Mild Sausage, Browned (Turkey Sausage can be used in place of Pork, if desired)

¾ cup Apple Cider

1 Tablespoon Flour

2 Tablespoons Brown Sugar

½ Teaspoon Cinnamon

¼ Teaspoon Vanilla

Spray One-Quart Casserole dish with Spray Butter or Spray Oil. Layer Sweet Potatoes, Apples, Onions in Casserole Dish. Top with Browned Sausage. In a separate mixing bowl, whisk together Cider, Flour, Brown Sugar, Cinnamon and Vanilla until well mixed. Pour evenly over Potato Apple Onion Mixture. Bake in preheated oven for approximately 30-45 minutes or until fork tender. Serve immediately.
