8 oz crushed tomatoes
1 T dried basil
3 T balsamic vinegar
Salt & Pepper
1# cooked chicken, cut into large chunks
4 oz soft goat cheese, crumbled.
Heat olive oil in large nonstick skillet over medium-high heat. Add peppers and onions, stirring constantly for 5-6 minutes until vegetables have softened and browned. Reduce heat to medium, add garlic, tomatoes, basil, vinegar, salt and pepper to taste. Bring to a simmer and add chicken. Simmer for about ten minutes until the flavors combine.
