Enjoy the freshness of a ‘Big Herm’ summer salad

RICHMOND, Va - Local Caterer Herman ‘Big Herm’ Baskerville owner of Big Herm's Kitchen and Catering put together his light and healthy salad using the fresh flavors of Summer.

Spinach salad with dried cranberries, grape tomatoes, candied pecans,  Manchego cheese and tangerine vinaigrette.

Prepare vinaigrette and pecans first and cool.

Prepare salad ingredients and toss. Add pecans and vinaigrette.

Tangerine vinaigrette:
3 cloves garlic
3/4 cup tangerine juice
1 tbs orange zest
3 tbs lemon juice
2 tbs sugar
1/4 tsp salt
3/4 cup oil(preferably olive)
Combine all ingredients except oil and pulse in ninja for 30 seconds
Turn ninja on slowest speed and slowly add oil until emulsified cool dressing

Candied pecans:
2 cup pecans
4 tbs butter
4 tbs brown sugar
Melt butter in astute pan add pecans and toss, add sugar and stir until caramel iced spread on wax paper and cool

Salad:
1 pound baby spinach
1 pint yellow grape tomatoes halved
1 cup craisins
1 cup of fresh grated Manchego cheese

Pick your protein. Chicken, Salmon or Shrimp....

Marinade...
Tbs lemon pepper
Tbs lemon juice
2 tsp fresh garlic
1 tsp ginger
1\4 cup oil
1\4 cup soy
1\4 cup brown sugar
1\4 tsp red pepper flakes
